  1. Knead dough, rest 30 min.
  2. For filling: heat oil, add cumin, onion, cook 1 min.
  3. Add ground dal, chillies, ginger, salt.
  4. Cook 5 min, cool.
  5. Make balls of dough, fill each, seal.
  6. Fry at 170°C, 4-5 min until golden-brown.
  7. Visual cue: kachori should be golden, crispy, spherical, oil draining off, filling visible if broken.
