- Ferment batter with yogurt, water, spices for 6-8 hours.
- Heat mustard oil to 170°C.
- Pipe batter into hot oil in spiral shape using squeeze bottle.
- Fry 1-2 min per side until golden.
- For syrup: dissolve jaggery in water, add cardamom and saffron.
- Dip hot jalebi immediately in warm syrup.
- Visual cue: jalebi should be golden-red, crispy outside, juicy inside, syrup dripping.
