  1. Marinate fish gently in yogurt, ginger, chillies, salt for 20 min.
  2. Boil rice half-cooked.
  3. Layer rice and fish carefully.
  4. Dot with ghee, fried onions, coriander, mint.
  5. Cover tightly.
  6. Cook on high heat 3 min.
  7. Reduce to low, cook 18 min.
  8. Rest 8 min.
