- Heat ghee, add onion, fry 2 min until soft.
- Add ginger and chilli, cook 30 sec.
- Beat eggs lightly, pour into pan.
- Scramble over medium heat 4-5 min until eggs are cooked through but slightly moist.
- Add salt and coriander.
- Serve with buttered, toasted pav.
