👩🍳 How to make Dhuska with Ghugni
- Soak dals and rice for 5 hours.
- Grind soaked ingredients with water, chillies, ginger until running consistency.
- Add cumin, asafoetida, turmeric, salt, coriander.
- Beat batter 2 min.
- Pour spoonfuls into hot mustard oil, fry 3 min per side until golden.
- For ghugni: pressure cook chickpeas 6 whistles with water and salt.
- Temper mustard oil with cumin and asafoetida, add onion, fry 2 min until soft, add chillies and ginger, cook 1 min.
- Add cooked chickpeas, turmeric, salt, coriander, 60ml water.
- Simmer 8 min.
- Visual cue: dhuska should be crispy outside, soft inside; ghugni should have thick curry coating chickpeas.
