  1. Soak all ingredients for 5 hours.
  2. Drain, grind with water, chillies, ginger into running consistency.
  3. Add cumin, asafoetida, salt, coriander.
  4. Beat batter 2 min.
  5. Heat mustard oil to 170°C.
  6. Drop large spoonfuls, fry 3 min per side until golden-brown and crispy.
  7. Visual cue: dhuska should be crispy outside, soft inside, golden-brown color throughout.
