👩🍳 How to make Carrot Halwa
- Heat ghee in heavy pot, add grated carrots, cook 8-10 min stirring frequently until carrots release moisture and start to caramelize.
- Add milk, bring to boil.
- Reduce heat, simmer 15 min until milk is mostly absorbed and carrots are soft.
- Add jaggery, stir until dissolved.
- Add cardamom, almonds, raisins, salt.
- Cook 5 more min.
- Serve warm.
- Visual cue: halwa should be orange-red, creamy, carrots soft and tender, ghee visible on surface, almonds golden.
