👩‍🍳 How to make Carrot Halwa

  1. Heat ghee in heavy pot, add grated carrots, cook 8-10 min stirring frequently until carrots release moisture and start to caramelize.
  2. Add milk, bring to boil.
  3. Reduce heat, simmer 15 min until milk is mostly absorbed and carrots are soft.
  4. Add jaggery, stir until dissolved.
  5. Add cardamom, almonds, raisins, salt.
  6. Cook 5 more min.
  7. Serve warm.
  8. Visual cue: halwa should be orange-red, creamy, carrots soft and tender, ghee visible on surface, almonds golden.
