- Heat mustard oil, add mustard and cumin seeds.
- When seeds crackle (20 sec), add ginger and chillies, cook 1 min.
- Add diced potato, fry 4 min until edges are crispy and golden.
- Rinse poha, add to pan with water and salt, toss continuously 3 min.
- Add fried onion and coriander.
