  1. Mix bajra flour with water, salt, ghee until smooth dough.
  2. Let rest 5 min.
  3. Divide into 6 portions, flatten between plastic sheets to ⅛ inch thickness.
  4. Heat tawa to medium-high.
  5. Place roti on tawa, cook 1.5 min until light brown spots appear, flip, cook 1 min.
  6. Brush with ghee.
  7. Visual cue: roti should have golden-brown spots, be pliable (not crispy), smell nutty.
