  1. Heat ghee, add jaggery, stir over low heat until it dissolves and caramelizes slightly (8-10 min).
  2. Add sesame, cardamom, salt.
  3. Mix quickly.
  4. Pour onto greased tray, cool 5 min, cut into pieces with oiled knife.
  5. Cool completely.
  6. Visual cue: arsa should be golden-brown, crispy, sesame seeds visible throughout, breaks cleanly.
