  1. Drain soaked poha.
  2. Heat ghee, add jaggery, stir over low heat until caramelized (6-8 min).
  3. Add poha, cardamom, peanuts, almonds, salt.
  4. Mix gently but thoroughly.
  5. Spread on greased tray, cool 10 min.
  6. Cut into squares.
  7. Visual cue: anarsa should be golden-brown, crispy yet chewy, nuts visible, cuts cleanly.
