  1. Toss potato noodles with gram flour, mustard oil, spices, salt.
  2. Mix gently.
  3. Heat mustard oil to 175°C.
  4. Fry potato noodles in batches 4-5 min until golden and crispy.
  5. Drain on paper towel.
  6. Cool and break into smaller pieces.
  7. Visual cue: bhujia should be golden-brown, very crispy, potato visible as golden strands.
