👩‍🍳 How to make Aam Paratha

  1. Knead dough, rest 10 min.
  2. Heat ghee, add cumin, cook 20 sec.
  3. Add mango, jaggery, chilli powder.
  4. Cook 2 min until mango softens and jaggery melts, cool.
  5. Divide dough into 6 balls, fill, seal, roll to 7-inch disc.
  6. Cook 1.5 min per side until light brown.
  7. Visual cue: paratha should have light brown spots, slightly wrinkled appearance, tangy aroma.
