👩🍳 How to make Wazwan Feast Morning Rice
- Rinse rice, soak 20 min
- Heat 2 tbsp ghee, fry onions 3 min until soft and translucent
- Add ginger, green chillies, fry 1 min (aroma releases)
- Add crushed whole spices, fry 1 min until fragrant
- Add ground spices (cumin, coriander, garam masala), stir 20 sec
- Add drained rice, stir-fry 2 min to coat with ghee
- Pour 2.5 cups water, add salt, bring to boil
- Fold in yogurt carefully, cover tightly
- Reduce heat to low, cook 20 min until water absorbs
- Rest 5 min covered
- Heat 1 tbsp ghee, roast cashews 1.5 min until golden, add almonds 1 min, add raisins
- Fluff rice with fork gently
- Mix in roasted nuts and mint leaves
