👩‍🍳 How to make Roth

  1. Heat 4 tbsp ghee in heavy pan on low heat, add flour
  2. Roast flour 5-7 min, stirring constantly, until light golden colour and nutty aroma
  3. Cool flour mixture 5 min, transfer to bowl
  4. Add jaggery powder, salt, cardamom powder, black pepper to roasted flour
  5. Heat remaining ghee with warm milk, pour into flour mixture
  6. Knead gently until soft dough forms (not too stiff)
  7. Flatten dough in greased 8-inch round pan or pie dish
  8. Scatter almonds, raisins, saffron threads on top, press gently
  9. Cover with foil, cook in preheated 300°F (150°C) oven
  10. Bake 35-40 min until golden-brown and cooked through (test with toothpick)
  11. Cool 10 min, cut into wedges, serve warm with ghee drizzle
  12. Visual cue: Golden-brown surface, slightly crisp edges, rich colour inside, nuts visible, aromatic cardamom scent
