👩🍳 How to make Rogan Josh with Rice
- Prepare Rogan Josh as per detailed recipe (see Rogan Josh entry, Steps 1-22)
- After 2 hours cooking, meat should be very tender
- Simultaneously prepare rice:
- Rinse basmati rice 3-4 times until water runs clear
- Soak rice 20 min
- Heat 1 tbsp ghee in separate pot on medium heat
- Add crushed green cardamom and clove, let sizzle 20 sec
- Add drained rice, stir 1 min to coat with ghee
- Pour 2 cups water with salt
- Bring to boil uncovered, 2 min
- Cover tightly with foil then lid
- Reduce heat to low
- Cook 18-20 min until water is absorbed
- Rest 5 min covered
- Fluff rice with fork
- Serve Rogan Josh spooned over white rice
