  1. Prepare Rogan Josh as per detailed recipe (see Rogan Josh entry, Steps 1-22)
  2. After 2 hours cooking, meat should be very tender
  3. Simultaneously prepare rice:
  4. Rinse basmati rice 3-4 times until water runs clear
  5. Soak rice 20 min
  6. Heat 1 tbsp ghee in separate pot on medium heat
  7. Add crushed green cardamom and clove, let sizzle 20 sec
  8. Add drained rice, stir 1 min to coat with ghee
  9. Pour 2 cups water with salt
  10. Bring to boil uncovered, 2 min
  11. Cover tightly with foil then lid
  12. Reduce heat to low
  13. Cook 18-20 min until water is absorbed
  14. Rest 5 min covered
  15. Fluff rice with fork
  16. Serve Rogan Josh spooned over white rice
