👩🍳 How to make Noon Chai
- Boil water in a pan, add tea leaves and crushed cardamom, simmer 3 min
- Add baking soda (mixture will froth and turn pink), stir continuously
- Let boil 2 min until water reduces by half, pink colour deepens
- Add ice-cold water (60ml) for 30 sec, then add milk gradually
- Boil again 3-4 min on medium heat, stirring constantly
- Pour vigorously for 30 sec to create froth, strain into cups
- Top with saffron threads, steep 1 min before drinking
