👩‍🍳 How to make Noon Chai

  1. Boil water in a pan, add tea leaves and crushed cardamom, simmer 3 min
  2. Add baking soda (mixture will froth and turn pink), stir continuously
  3. Let boil 2 min until water reduces by half, pink colour deepens
  4. Add ice-cold water (60ml) for 30 sec, then add milk gradually
  5. Boil again 3-4 min on medium heat, stirring constantly
  6. Pour vigorously for 30 sec to create froth, strain into cups
  7. Top with saffron threads, steep 1 min before drinking
  8. Visual cue: Bright coral-pink colour, aromatic, layered foam on top
