👩‍🍳 How to make Kashmiri Wazwan Rice

  1. Rinse basmati rice thoroughly in cold water until water runs clear (3-4 times)
  2. Soak rice in 2 cups water 20-30 min
  3. Heat ghee in heavy-bottomed pot on medium heat
  4. Add whole spices (cardamom, cinnamon, cloves, bay leaves, cumin), fry 1 min until fragrant
  5. Add soaked rice with water, stir gently for 1 min
  6. Add salt, bring to boil uncovered, 2 min
  7. Cover tightly with foil then lid, reduce heat to low
  8. Cook undisturbed 18 min until rice absorbs water completely
  9. Meanwhile, heat 1 tbsp ghee in small pan, toast almonds 2 min until golden, add raisins
  10. Remove from heat, let rest 5 min covered
  11. Garnish with toasted almonds and raisins
