👩🍳 How to make Kashmiri Wazwan Rice
- Rinse basmati rice thoroughly in cold water until water runs clear (3-4 times)
- Soak rice in 2 cups water 20-30 min
- Heat ghee in heavy-bottomed pot on medium heat
- Add whole spices (cardamom, cinnamon, cloves, bay leaves, cumin), fry 1 min until fragrant
- Add soaked rice with water, stir gently for 1 min
- Add salt, bring to boil uncovered, 2 min
- Cover tightly with foil then lid, reduce heat to low
- Cook undisturbed 18 min until rice absorbs water completely
- Meanwhile, heat 1 tbsp ghee in small pan, toast almonds 2 min until golden, add raisins
- Remove from heat, let rest 5 min covered
- Garnish with toasted almonds and raisins
