👩🍳 How to make Kashmiri Savoury Momos
- Mix flour, salt, knead with water to form soft, pliable dough
- Knead 5 min until smooth, cover 15 min
- Heat 1 tbsp ghee, sauté onions 1.5 min until soft
- Add ginger-chilli, fry 30 sec, add asafoetida
- Add mashed potato, peas, mix well, season with salt, cool completely
- Divide dough into 12 equal balls, flatten each
- Roll thin (3-4 inches diameter, tissue-thin)
- Place 1 tsp filling in centre, bring edges together, pleat to seal (small pouch)
- Boil water in pot with pinch salt, drop momos
- Momos sink, then float to surface after 2 min
- Boil 3 min more after floating, remove with slotted spoon
- Serve hot with spicy pickle or tomato chutney
