👩🍳 How to make Kashmiri Rice Porridge
- Heat ghee in heavy pan on medium heat
- Add crushed spices (cardamom, cloves, cinnamon), fry 1 min
- Add broken rice, fry 2 min in ghee (rice grains separate and lightly toast)
- Pour 3 cups water, add salt, bring to boil
- Reduce heat to low, cover, simmer 20 min
- Rice breaks down into porridge-like consistency, water mostly absorbed
- Add milk, stir well, simmer 5 more min uncovered
- Meanwhile heat 1 tbsp ghee, roast cashews 2 min until golden, add raisins
- Stir porridge, consistency should be creamy and pourable
- Garnish with roasted cashews and raisins
