👩‍🍳 How to make Kashmiri Rice Porridge

  1. Heat ghee in heavy pan on medium heat
  2. Add crushed spices (cardamom, cloves, cinnamon), fry 1 min
  3. Add broken rice, fry 2 min in ghee (rice grains separate and lightly toast)
  4. Pour 3 cups water, add salt, bring to boil
  5. Reduce heat to low, cover, simmer 20 min
  6. Rice breaks down into porridge-like consistency, water mostly absorbed
  7. Add milk, stir well, simmer 5 more min uncovered
  8. Meanwhile heat 1 tbsp ghee, roast cashews 2 min until golden, add raisins
  9. Stir porridge, consistency should be creamy and pourable
  10. Garnish with roasted cashews and raisins
