👩🍳 How to make Kashmiri Halwa
- Heat 2 tbsp ghee in heavy non-stick pan on low-medium heat
- Add rolled oats, roast on low heat
- Stir continuously 4-5 min (oats become golden, release nutty aroma)
- Oats should not brown too much or burn
- Heat milk in separate pan until warm (don't boil)
- Pour warm milk into toasted oats gradually while stirring
- Stir constantly to prevent lumps
- Add sugar, stir well
- Reduce heat to low, simmer stirring frequently
- Cook 20-25 min until oats are fully cooked and creamy (mixture thickens)
- Mixture should be thick, pourable consistency
- Add cardamom powder
- Meanwhile, heat remaining 1 tbsp ghee in small pan on low heat
- Add almonds, fry 1.5 min until golden
- Add cashews, fry 1 min
- Add raisins, fry 30 sec
- Remove roasted nuts to plate
- When halwa is cooked:
- Pour saffron milk with threads
- Add remaining ghee (already in roasting pan), stir gently
- Top with roasted nuts and optional silver leaf
- Serve warm in bowls
