👩‍🍳 How to make Kashmiri Date & Walnut Burfi

  1. Heat 2 tbsp ghee in heavy pan on low-medium heat
  2. Add chopped dates, cook 3-4 min stirring frequently (dates soften, partially break down)
  3. Add ¼ cup milk gradually, stir well (mixture becomes creamy)
  4. Add walnuts, stir well to combine
  5. Continue cooking 8-10 min on low heat stirring frequently
  6. Mixture should thicken, becomes darker, comes away from pan sides slightly
  7. Add cardamom powder, salt
  8. Remove from heat
  9. Spread mixture on parchment paper, cool 10-15 min until warm
  10. Divide into 16 equal portions
  11. Roll each portion into ball or square shape
  12. Place on parchment paper, cool completely
  13. Store in airtight container at room temperature
  14. Visual cue: Dark brown fudgy texture, visible walnut pieces, smooth surface, firm but slightly soft inside, aromatic date-cardamom scent
