👩‍🍳 How to make Kashmiri Chicken in Aromatic Tomato Gravy

  1. Heat 2 tbsp ghee in large pan on high heat
  2. Add sliced onions, fry 5-6 min until deeply caramelized and light brown
  3. Remove half of onions to plate (for garnish)
  4. To remaining onions, add tomato paste, fry 2 min (paste caramelizes, darkens)
  5. Add chicken pieces, fry 3-4 min (chicken browns slightly, releases some moisture)
  6. Add all ground spices (cumin, coriander, red chilli, ginger, garam masala)
  7. Stir constantly 2 min (spices roast in ghee, coat chicken, release oils)
  8. Add crushed whole spices (cardamom, cloves, cinnamon)
  9. Stir 1 min until fragrant
  10. Add asafoetida
  11. Whisk yogurt smooth
  12. Add yogurt in 2 additions, stirring well between additions (prevents curdling)
  13. Pour 1.5 cups water
  14. Add salt, stir
  15. Cover, bring to boil on high heat
  16. Immediately reduce to low heat, simmer covered 40 min
  17. Chicken should be very tender, skin soft
  18. Add green chillies, simmer 5 min more
  19. If gravy is too thin, simmer uncovered 5-10 min to reduce (should coat spoon)
  20. Stir in chopped coriander
  21. Top with caramelized onion garnish
