👩🍳 How to make Kashmiri Chicken in Aromatic Tomato Gravy
- Heat 2 tbsp ghee in large pan on high heat
- Add sliced onions, fry 5-6 min until deeply caramelized and light brown
- Remove half of onions to plate (for garnish)
- To remaining onions, add tomato paste, fry 2 min (paste caramelizes, darkens)
- Add chicken pieces, fry 3-4 min (chicken browns slightly, releases some moisture)
- Add all ground spices (cumin, coriander, red chilli, ginger, garam masala)
- Stir constantly 2 min (spices roast in ghee, coat chicken, release oils)
- Add crushed whole spices (cardamom, cloves, cinnamon)
- Stir 1 min until fragrant
- Add asafoetida
- Whisk yogurt smooth
- Add yogurt in 2 additions, stirring well between additions (prevents curdling)
- Pour 1.5 cups water
- Add salt, stir
- Cover, bring to boil on high heat
- Immediately reduce to low heat, simmer covered 40 min
- Chicken should be very tender, skin soft
- Add green chillies, simmer 5 min more
- If gravy is too thin, simmer uncovered 5-10 min to reduce (should coat spoon)
- Stir in chopped coriander
- Top with caramelized onion garnish
