👩🍳 How to make Kashmiri Almond Paste Delight
- Soak blanched almonds in hot water 3 min, remove skins easily
- Grind almonds with 4 tbsp milk to smooth paste
- Heat 2 tbsp ghee in pan on low heat
- Add rice flour, cook 2-3 min stirring constantly until light golden and nutty aroma
- Add almond paste, cook 3 min on low heat, stirring (paste browns slightly)
- Gradually add remaining milk, stirring to avoid lumps
- Add jaggery powder, salt, stir well until jaggery dissolves
- Cook 8-10 min on low heat, stirring often, until mixture thickens and coats spoon
- Add cardamom powder, saffron milk with threads
- Add remaining ghee, stir
- Cook 2 min more, let cool slightly
- Serve warm in bowls
