👩‍🍳 How to make Kashmiri Almond Paste Delight

  1. Soak blanched almonds in hot water 3 min, remove skins easily
  2. Grind almonds with 4 tbsp milk to smooth paste
  3. Heat 2 tbsp ghee in pan on low heat
  4. Add rice flour, cook 2-3 min stirring constantly until light golden and nutty aroma
  5. Add almond paste, cook 3 min on low heat, stirring (paste browns slightly)
  6. Gradually add remaining milk, stirring to avoid lumps
  7. Add jaggery powder, salt, stir well until jaggery dissolves
  8. Cook 8-10 min on low heat, stirring often, until mixture thickens and coats spoon
  9. Add cardamom powder, saffron milk with threads
  10. Add remaining ghee, stir
  11. Cook 2 min more, let cool slightly
  12. Serve warm in bowls
