👩🍳 How to make Girda
- Mix yeast with ¼ cup warm water, add sugar, let rest 10 min until frothy
- Mix flour and salt in bowl, create well in centre
- Pour yeast mixture and ghee into well, gradually add remaining water (60ml)
- Knead dough 10-12 min until smooth and elastic (initially sticky, becomes smooth)
- Cover tightly, keep in warm place 2 hours until doubled in size
- Divide into 4 equal portions, flatten with hands into ¼ inch thick discs
- Use fingers to press lines down length of bread (traditional finger impressions)
- Heat cast iron tawa or griddle on medium heat (oil lightly)
- Cook girda 5-6 min per side until golden-brown spots appear, puffed edges
- Brush with ghee, serve hot with butter or curd
