👩‍🍳 How to make Girda

  1. Mix yeast with ¼ cup warm water, add sugar, let rest 10 min until frothy
  2. Mix flour and salt in bowl, create well in centre
  3. Pour yeast mixture and ghee into well, gradually add remaining water (60ml)
  4. Knead dough 10-12 min until smooth and elastic (initially sticky, becomes smooth)
  5. Cover tightly, keep in warm place 2 hours until doubled in size
  6. Divide into 4 equal portions, flatten with hands into ¼ inch thick discs
  7. Use fingers to press lines down length of bread (traditional finger impressions)
  8. Heat cast iron tawa or griddle on medium heat (oil lightly)
  9. Cook girda 5-6 min per side until golden-brown spots appear, puffed edges
  10. Brush with ghee, serve hot with butter or curd
