👩‍🍳 How to make Toor Dal with Greens

  1. Wash toor dal thoroughly until water runs clear; soak 10 min.
  2. In pressure cooker, add dal with 600ml water and ½ tsp salt. Cook 2 whistles (10 min).
  3. Heat ghee + oil (20ml total) in separate kadai over medium heat (160°C).
  4. Add mustard seeds; crackle 30 sec.
  5. Add cumin seeds; fry 30 sec.
  6. Add asafoetida, curry leaves; fry 1 min.
  7. Pour cooked dal into kadai; add turmeric, red chilli, salt (4.5g); stir well.
  8. Add chopped spinach; mix thoroughly.
  9. Simmer on low heat (120°C) for 8-10 min. Dal should be creamy, spinach wilted.
  10. Add lemon juice; stir well.
  11. Serve hot with rice or khichdi. Should be green-tinted, creamy, aromatic.
