👩‍🍳 How to make Til Laddu

  1. Dry roast sesame seeds in heavy pan on low heat for 5-6 minutes, stirring constantly.
  2. Seeds should turn light golden and become fragrant.
  3. Transfer to bowl. Let cool slightly (2 minutes).
  4. Heat ghee in same pan on medium heat (20 seconds).
  5. Add grated jaggery. Stir on medium heat until melted (3-4 minutes).
  6. Jaggery should look glossy, not grainy.
  7. Add crushed peanuts. Mix well.
  8. Remove from heat. Let cool 1 minute.
  9. Add toasted sesame seeds and cardamom powder to jaggery mixture. Stir well immediately (mixture will thicken as it cools).
  10. Once cool enough to handle (2-3 minutes), grease palms with ghee.
  11. Take 20g mixture (about walnut-size). Roll tightly between palms into smooth ball.
  12. Repeat with remaining mixture.
  13. Place on parchment paper. Let cool completely (30 minutes). Balls will harden.
  14. Jaggery: Glossy, melted completely
  15. Mixture: Combined well with seeds
  16. Cooled balls: Hard, maintain shape
