👩🍳 How to make Til Laddu
- Dry roast sesame seeds in heavy pan on low heat for 5-6 minutes, stirring constantly.
- Seeds should turn light golden and become fragrant.
- Transfer to bowl. Let cool slightly (2 minutes).
- Heat ghee in same pan on medium heat (20 seconds).
- Add grated jaggery. Stir on medium heat until melted (3-4 minutes).
- Jaggery should look glossy, not grainy.
- Add crushed peanuts. Mix well.
- Remove from heat. Let cool 1 minute.
- Add toasted sesame seeds and cardamom powder to jaggery mixture. Stir well immediately (mixture will thicken as it cools).
- Once cool enough to handle (2-3 minutes), grease palms with ghee.
- Take 20g mixture (about walnut-size). Roll tightly between palms into smooth ball.
- Repeat with remaining mixture.
- Place on parchment paper. Let cool completely (30 minutes). Balls will harden.
- Jaggery: Glossy, melted completely
- Mixture: Combined well with seeds
- Cooled balls: Hard, maintain shape
