👩🍳 How to make Sukhdi
- Grease a 7-inch square plate thoroughly with ghee on all sides.
- Place ghee (125g) in heavy-bottomed pan over low-medium heat (140°C) until melted and warm.
- Add wheat flour; stir continuously to create thick, lumpy paste.
- Roast on low heat (130°C) with constant stirring for 4-5 min.
- Mixture should become lighter, airier, turning darker with toasted aroma.
- Immediately remove from heat when flour is properly roasted.
- Mix in grated jaggery while flour is still hot; it melts instantly.
- Stir well for 1-2 min until combined.
- Quickly pour mixture onto prepared plate; spread evenly using back of spoon.
- While still warm (after 1-2 min), mark with knife into 2-inch squares or diamonds.
- Allow to cool completely before removing pieces.
- Serve at room temperature. Should be soft, crumbly, melting on tongue.
