👩‍🍳 How to make Shrikhand

  1. If not pre-hung, line fine mesh strainer with cheesecloth; pour 800ml yogurt.
  2. Let drain 6-8 hours in refrigerator until about 400g hung curd remains.
  3. Add powdered sugar (80g); mix well until completely dissolved, creamy.
  4. Soak saffron strands in 1 tbsp warm milk for 5 min.
  5. Pour saffron milk into shrikhand; mix thoroughly.
  6. Add cardamom powder and nutmeg powder; stir well.
  7. Top with sliced almonds and pistachios.
  8. Serve chilled. Should be creamy, slightly thick, aromatic.
