👩🍳 How to make Shrikhand
- If not pre-hung, line fine mesh strainer with cheesecloth; pour 800ml yogurt.
- Let drain 6-8 hours in refrigerator until about 400g hung curd remains.
- Add powdered sugar (80g); mix well until completely dissolved, creamy.
- Soak saffron strands in 1 tbsp warm milk for 5 min.
- Pour saffron milk into shrikhand; mix thoroughly.
- Add cardamom powder and nutmeg powder; stir well.
- Top with sliced almonds and pistachios.
- Serve chilled. Should be creamy, slightly thick, aromatic.
