👩‍🍳 How to make Shakarpara

  1. Mix maida, wheat flour, ajwain, salt in bowl.
  2. Add 30ml oil gradually while mixing.
  3. Add water slowly; knead into firm dough. Rest 10 min.
  4. On floured surface, roll dough into thin sheet (2-3mm thickness).
  5. Cut into 1-inch squares using knife.
  6. Heat oil in deep wok to 170°C (test: small piece browns slowly).
  7. Deep fry squares 1-2 min on medium heat (160°C) until light golden.
  8. Flip; fry other side 1 min until golden and crispy.
  9. Remove with slotted spoon; drain on paper.
  10. Make syrup: In saucepan, heat powdered sugar + 30ml water over low heat (120°C) for 3-4 min until sugar dissolves and syrup thickens slightly.
  11. While shakarpara still warm, toss in powdered sugar mixture to coat.
  12. Spread on parchment to cool and set.
  13. Store in airtight container.
  14. Serve as snack. Should be crispy, sweet, crunchy.
