👩🍳 How to make Rava Dhokla
- In bowl, mix rava, curd, water, salt, ginger, green chili, turmeric, lemon juice, and 30ml oil. Stir well.
- Should be smooth batter (like thick soup). If thick, add water (5ml at a time).
- Let rest 10 minutes. Batter will thicken.
- Just before steaming, add Eno (fruit salt). Stir gently. Batter will froth up.
- Prepare steamer: Bring water to boil in large pot with steamer rack.
- Grease 20cm square pan with oil.
- Pour batter into pan. Tap to release bubbles.
- Place on steamer rack. Cover. Steam 12-15 minutes on high heat until:
- Top is set and firm
- Skewer inserted comes out clean
- Cool 5 minutes.
- Heat 15ml oil on high heat. Add mustard seeds, fry until crackling. Add curry leaves and asafoetida. Pour over dhokla.
- Add fresh coriander.
- Cut into squares. Serve warm.
