👩‍🍳 How to make Rava Dhokla

  1. In bowl, mix rava, curd, water, salt, ginger, green chili, turmeric, lemon juice, and 30ml oil. Stir well.
  2. Should be smooth batter (like thick soup). If thick, add water (5ml at a time).
  3. Let rest 10 minutes. Batter will thicken.
  4. Just before steaming, add Eno (fruit salt). Stir gently. Batter will froth up.
  5. Prepare steamer: Bring water to boil in large pot with steamer rack.
  6. Grease 20cm square pan with oil.
  7. Pour batter into pan. Tap to release bubbles.
  8. Place on steamer rack. Cover. Steam 12-15 minutes on high heat until:
  9. Top is set and firm
  10. Skewer inserted comes out clean
  11. Cool 5 minutes.
  12. Heat 15ml oil on high heat. Add mustard seeds, fry until crackling. Add curry leaves and asafoetida. Pour over dhokla.
  13. Add fresh coriander.
  14. Cut into squares. Serve warm.
