👩🍳 How to make Radish Curry
- Peel and cut radish into 1.5cm cubes. Chop tender radish leaves.
- Heat oil (20ml) in heavy kadai over medium heat (160°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, green chillies; fry 1 min.
- Add ginger; fry 1 min.
- Add radish cubes; stir well for 2 min to coat with oil.
- Add turmeric, red chilli, coriander, salt (5g), sugar; mix thoroughly.
- Cover kadai; cook on medium heat (150°C) for 15-18 min, stirring every 5 min.
- Add chopped radish leaves in final 2 min; stir well.
- Radish should become tender, slightly crispy at edges.
- Add lemon juice; stir well.
- Serve hot. Should have peppery bite from radish, tender leaves.
