👩‍🍳 How to make Radish Curry

  1. Peel and cut radish into 1.5cm cubes. Chop tender radish leaves.
  2. Heat oil (20ml) in heavy kadai over medium heat (160°C).
  3. Add mustard seeds; crackle 30 sec.
  4. Add cumin seeds, asafoetida, green chillies; fry 1 min.
  5. Add ginger; fry 1 min.
  6. Add radish cubes; stir well for 2 min to coat with oil.
  7. Add turmeric, red chilli, coriander, salt (5g), sugar; mix thoroughly.
  8. Cover kadai; cook on medium heat (150°C) for 15-18 min, stirring every 5 min.
  9. Add chopped radish leaves in final 2 min; stir well.
  10. Radish should become tender, slightly crispy at edges.
  11. Add lemon juice; stir well.
  12. Serve hot. Should have peppery bite from radish, tender leaves.
