👩🍳 How to make Rabri
- Pour milk (1.5 liters) into wide, heavy-bottomed pan.
- Bring to boil on high heat (190°C).
- Add cracked cardamom pods.
- Reduce heat to low-medium (130°C); let milk simmer slowly 45-50 min.
- Stir occasionally, scraping cream that forms on surface and folding it back in.
- Milk should reduce to about 600ml (to ⅖ original volume) and become thick, creamy.
- When thick and reduced, add sugar (100g); stir well.
- Soak saffron in 2 tbsp warm milk; add to rabri.
- Add nutmeg powder; stir well.
- If using khoya, crumble and stir in.
- Cook on low heat (120°C) for 2 min more.
- Serve warm, garnished with almonds and pistachios.
- Should be creamy, thick, milk-brown color.
