👩‍🍳 How to make Puran Poli

  1. (Filling):
  2. In heavy pan, heat ghee (30ml) over low heat (120°C).
  3. Add cooked mashed toor dal; stir well.
  4. Add grated jaggery (120g); mix thoroughly.
  5. Add cardamom and nutmeg powder; stir well.
  6. Cook on low heat (110°C) for 10-12 min, stirring frequently, until mixture is thick, no moisture remains.
  7. Cool completely.
  8. (Dough):
  9. Mix wheat flour, salt (¼ tsp), ghee (20ml) in large bowl.
  10. Add water gradually; knead into soft dough. Rest 15 min.
  11. (Assembly):
  12. Divide dough into 8 equal portions.
  13. Divide filling into 8 equal portions.
  14. Roll each dough portion into 3-inch disc.
  15. Place 1 filling portion in center.
  16. Bring edges up to seal; press to flatten into 3-inch disc again.
  17. Gently roll to 5-6 inch disc (don't apply too much pressure; filling may leak).
  18. Heat griddle (tawa) over medium heat (160°C).
  19. Place poli on griddle; cook 2 min until light brown spots appear.
  20. Flip; apply 1ml oil on cooked side.
  21. Cook 2 min; flip again. Apply 1ml oil. Cook 1 min more.
  22. Remove when golden, puffed slightly.
  23. Serve hot, drizzled with ghee. Should be soft, sweet, cooked through.
