👩🍳 How to make Okra Fry
- Wash okra thoroughly; dry completely on clean cloth.
- Trim tops; cut into 3cm pieces.
- Heat oil (25ml) in large wok over high heat (190°C).
- Add okra pieces; stir constantly for 4-5 min until golden and crispy.
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, green chillies; fry 1 min.
- Add turmeric, red chilli, coriander, salt (5g), sugar; mix well.
- Continue cooking on medium heat (160°C) for 6-8 min, stirring frequently.
- Okra should be crispy, golden, no sliminess.
- Sprinkle sesame seeds; add lemon juice.
- Serve hot. Okra should be crunchy, aromatic.
