👩‍🍳 How to make Okra Fry

  1. Wash okra thoroughly; dry completely on clean cloth.
  2. Trim tops; cut into 3cm pieces.
  3. Heat oil (25ml) in large wok over high heat (190°C).
  4. Add okra pieces; stir constantly for 4-5 min until golden and crispy.
  5. Add mustard seeds; crackle 30 sec.
  6. Add cumin seeds, asafoetida, green chillies; fry 1 min.
  7. Add turmeric, red chilli, coriander, salt (5g), sugar; mix well.
  8. Continue cooking on medium heat (160°C) for 6-8 min, stirring frequently.
  9. Okra should be crispy, golden, no sliminess.
  10. Sprinkle sesame seeds; add lemon juice.
  11. Serve hot. Okra should be crunchy, aromatic.
