👩🍳 How to make Nariyal Pak
- Heat 100ml ghee in heavy-bottomed pan on medium heat (30 seconds).
- Add grated coconut. Stir constantly for 8-10 minutes.
- Coconut will release oil and become fragrant. It should start turning light golden.
- Visual cue: Oil will be visible throughout, coconut becomes lighter in color.
- Add milk powder. Stir well for 1 minute.
- Add remaining ghee (100ml) gradually. Stir continuously.
- Add sugar. Mix well on medium heat for 2-3 minutes until sugar dissolves.
- Reduce heat to low. Continue cooking, stirring frequently, for 12-15 minutes.
- Mixture will become thick and pasty. When you stir, it should leave a trail.
- Add crushed cardamom and saffron. Mix well.
- Add almonds and cashew pieces. Stir for 1 minute.
- Transfer to greased tray. Smooth top with buttered spatula.
- Let cool 10 minutes at room temperature.
- Cut into 2.5cm × 2.5cm squares.
- Color: Light golden
- Texture: Thick, pasty, leaves trail when stirred
- Oil: Visible throughout
