👩‍🍳 How to make Nariyal Pak

  1. Heat 100ml ghee in heavy-bottomed pan on medium heat (30 seconds).
  2. Add grated coconut. Stir constantly for 8-10 minutes.
  3. Coconut will release oil and become fragrant. It should start turning light golden.
  4. Visual cue: Oil will be visible throughout, coconut becomes lighter in color.
  5. Add milk powder. Stir well for 1 minute.
  6. Add remaining ghee (100ml) gradually. Stir continuously.
  7. Add sugar. Mix well on medium heat for 2-3 minutes until sugar dissolves.
  8. Reduce heat to low. Continue cooking, stirring frequently, for 12-15 minutes.
  9. Mixture will become thick and pasty. When you stir, it should leave a trail.
  10. Add crushed cardamom and saffron. Mix well.
  11. Add almonds and cashew pieces. Stir for 1 minute.
  12. Transfer to greased tray. Smooth top with buttered spatula.
  13. Let cool 10 minutes at room temperature.
  14. Cut into 2.5cm × 2.5cm squares.
  15. Color: Light golden
  16. Texture: Thick, pasty, leaves trail when stirred
  17. Oil: Visible throughout
