👩‍🍳 How to make Millet Rice

  1. Roast millet grains lightly in pan for 2-3 min on medium heat (160°C) until fragrant.
  2. Grind roasted millet to coarse flour.
  3. Heat ghee + oil (25ml total) in heavy-bottomed pot over medium heat (160°C).
  4. Add cumin seeds; let crackle 30 sec.
  5. Add asafoetida, green chillies, ginger; fry 1 min.
  6. Add turmeric; stir for 30 sec.
  7. Slowly add millet flour, stirring continuously for 3-4 min to coat with ghee.
  8. Gradually pour 600ml water while stirring to avoid lumps.
  9. Add salt (5g); bring to boil over medium-high heat (180°C).
  10. Reduce heat to low (120°C); cover and cook for 15-18 min until cooked through.
  11. Stir occasionally. Bajra should be fluffy, creamy.
  12. Serve hot. Should have nutty aroma, creamy texture, slightly granular.
