👩‍🍳 How to make Khichdi

  1. Rinse rice and toor dal separately under running water until water runs clear.
  2. In a 3-liter pressure cooker, heat 30ml ghee on medium heat (30 seconds) until hot.
  3. Add cumin seeds. Fry 10 seconds until fragrant.
  4. Add bay leaf, cinnamon, clove, and black cardamom. Fry 5 seconds.
  5. Add rice and toor dal. Stir well to coat with ghee (1-2 minutes).
  6. Add turmeric and salt. Stir.
  7. Pour water. Stir once.
  8. Close lid with sealing ring. Keep vent open initially.
  9. Bring to high heat. Once steam emerges steadily (1-2 minutes), close vent.
  10. Cook 3 whistles (9 minutes) on medium heat. After third whistle, reduce to low heat.
  11. Turn off heat. Let pressure release naturally (5 minutes).
  12. Open lid. Grains should be soft, lentils dissolved into grains, liquid fully absorbed.
  13. Stir gently with fork to fluff.
  14. Each grain tender, not hard
  15. Creamy consistency (grains stick together slightly)
  16. Color: Pale golden
