👩‍🍳 How to make Khichdi

  1. Wash rice and moong dal separately; soak together 10 min.
  2. Heat ghee + oil (25ml total) in pressure cooker over medium heat (160°C).
  3. Add cumin seeds; let crackle for 30 sec until fragrant.
  4. Add asafoetida, green chillies, ginger, curry leaves; sauté 2 min.
  5. Add turmeric; stir well.
  6. Drain rice and dal; add to pot. Stir for 2 min to coat with ghee.
  7. Add 600ml water and salt (5g).
  8. Close lid; cook on high heat (200°C) for 1 whistle, then low heat (120°C) for 8 min.
  9. Turn off heat; let rest 5 min without opening lid.
  10. Open lid; fluff with fork. Serve hot. Khichdi should be soft, creamy, with grains separated.
