👩‍🍳 How to make Kheer

  1. Heat ghee (20ml) in heavy-bottomed pan over medium heat (160°C).
  2. Add washed rice; fry 2 min until opaque.
  3. Add milk (1 liter); bring to boil over high heat (190°C).
  4. Add cracked cardamom pods, cinnamon stick; reduce heat to medium (150°C).
  5. Simmer 20-25 min, stirring occasionally to prevent rice from sticking.
  6. Rice should be cooked, milk should start thickening.
  7. Add sugar (80g); stir well until dissolved.
  8. Soak saffron in 2 tbsp warm milk; add to kheer.
  9. Cook on low heat (120°C) for 3-4 min more.
  10. Serve warm, garnished with sliced almonds and pistachios.
  11. Should be creamy, rice cooked, aromatic.
