👩🍳 How to make Kheer
- Heat ghee (20ml) in heavy-bottomed pan over medium heat (160°C).
- Add washed rice; fry 2 min until opaque.
- Add milk (1 liter); bring to boil over high heat (190°C).
- Add cracked cardamom pods, cinnamon stick; reduce heat to medium (150°C).
- Simmer 20-25 min, stirring occasionally to prevent rice from sticking.
- Rice should be cooked, milk should start thickening.
- Add sugar (80g); stir well until dissolved.
- Soak saffron in 2 tbsp warm milk; add to kheer.
- Cook on low heat (120°C) for 3-4 min more.
- Serve warm, garnished with sliced almonds and pistachios.
- Should be creamy, rice cooked, aromatic.
