👩‍🍳 How to make Khaman Dhokla

  1. Mix water with salt, sugar, oil, ginger, chilli paste, citric acid in bowl.
  2. Sieve besan and turmeric together; mix with semolina.
  3. Add spiced water to dry ingredients gradually. Whisk vigorously 50-60 sec until aerated.
  4. Boil 4 cups water in steamer. Grease 5-inch pan.
  5. Add Eno fruit salt + 1 tbsp water to batter; mix quickly.
  6. Pour into pan immediately; steam 18-20 min on medium-high heat (180°C) until knife emerges clean.
  7. Cool 5 min; unmold and cut into 2cm squares.
  8. For tempering: Heat oil (15ml) over medium heat (160°C).
  9. Add mustard seeds; crackle 30 sec.
  10. Add curry leaves, asafoetida, sliced chillies; fry 1 min.
  11. Add sugar, salt, and 125ml water; bring to boil.
  12. Pour warm tempering over dhokla pieces.
  13. Garnish with sesame seeds, coconut, coriander.
  14. Serve warm. Should be soft, spongy, light yellow.
