👩‍🍳 How to make Jowar Flatbread Curry

  1. For rotis: Mix jowar flour with salt (4g), water, and 1 tsp oil to form soft dough.
  2. Divide into 4 portions; flatten between plastic sheets into thin rounds.
  3. Heat griddle to medium-high heat (180°C); cook each roti 2-3 min per side until golden.
  4. For curry: Cut vegetables into 1.5cm cubes.
  5. Heat oil (20ml) in kadai over medium heat (160°C).
  6. Add mustard and cumin seeds; crackle 30 sec.
  7. Add green chillies, ginger; fry 1 min.
  8. Add vegetable cubes; stir for 2 min.
  9. Add turmeric, red chilli, salt (4g), sugar; cover and cook 12-15 min.
  10. Vegetables should be tender, flavors combined.
  11. Serve jowar rotis with hot vegetable curry.
