👩‍🍳 How to make Green Mango Curry

  1. Peel and cube raw green mangoes, removing pit.
  2. Heat oil (20ml) in heavy kadai over medium heat (160°C).
  3. Add mustard seeds; crackle 30 sec.
  4. Add cumin seeds, asafoetida, green chillies; fry 1 min.
  5. Add mango cubes; stir well for 2 min.
  6. Add turmeric, red chilli, coriander, salt (5g), sugar; mix thoroughly.
  7. Cover kadai; cook on medium heat (150°C) for 20-22 min, stirring every 5 min.
  8. Mangoes should soften, break down slightly, absorb spices.
  9. Sprinkle sesame seeds.
  10. Serve hot. Should have tart, spicy flavor, creamy texture.
