👩🍳 How to make Green Mango Curry
- Peel and cube raw green mangoes, removing pit.
- Heat oil (20ml) in heavy kadai over medium heat (160°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, green chillies; fry 1 min.
- Add mango cubes; stir well for 2 min.
- Add turmeric, red chilli, coriander, salt (5g), sugar; mix thoroughly.
- Cover kadai; cook on medium heat (150°C) for 20-22 min, stirring every 5 min.
- Mangoes should soften, break down slightly, absorb spices.
- Sprinkle sesame seeds.
- Serve hot. Should have tart, spicy flavor, creamy texture.
