👩🍳 How to make Green Lentil Curry
- Wash moong dal thoroughly until water runs clear; soak 10 min.
- In pressure cooker, add dal with 600ml water and pinch salt. Cook 2 whistles (10 min).
- Heat ghee + oil (25ml total) in separate kadai over medium heat (160°C).
- Add cumin seeds; let crackle 30 sec.
- Add asafoetida, curry leaves, dried red chillies; fry 1 min.
- Pour cooked dal into ghee mixture; stir well for 2 min.
- Add turmeric, red chilli powder, coriander, salt (5g), sugar; mix thoroughly.
- Simmer on low heat (120°C) for 8-10 min. Dal should be creamy, coat back of spoon.
- Add lemon juice; stir well.
- Garnish with coriander leaves.
- Serve hot with rice, khichdi, or rotli. Should be smooth, creamy, aromatic.
