👩‍🍳 How to make Green Lentil Curry

  1. Wash moong dal thoroughly until water runs clear; soak 10 min.
  2. In pressure cooker, add dal with 600ml water and pinch salt. Cook 2 whistles (10 min).
  3. Heat ghee + oil (25ml total) in separate kadai over medium heat (160°C).
  4. Add cumin seeds; let crackle 30 sec.
  5. Add asafoetida, curry leaves, dried red chillies; fry 1 min.
  6. Pour cooked dal into ghee mixture; stir well for 2 min.
  7. Add turmeric, red chilli powder, coriander, salt (5g), sugar; mix thoroughly.
  8. Simmer on low heat (120°C) for 8-10 min. Dal should be creamy, coat back of spoon.
  9. Add lemon juice; stir well.
  10. Garnish with coriander leaves.
  11. Serve hot with rice, khichdi, or rotli. Should be smooth, creamy, aromatic.
