👩🍳 How to make Green Bean Stir-Fry
- Chop flat beans into 3cm pieces.
- Heat oil (20ml) in large kadai over medium heat (160°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, curry leaves, green chillies; fry 1 min.
- Add ginger; fry 1 min until fragrant.
- Add flat beans; stir well for 2 min to coat with oil.
- Add turmeric, red chilli, coriander, salt (5g), sugar; mix thoroughly.
- Cover kadai; cook on medium heat (150°C) for 15-18 min, stirring every 5 min.
- Beans should become tender, slightly shriveled, golden.
- Sprinkle sesame seeds; add lemon juice.
- Serve hot. Should have nutty aroma from sesame, tender beans.
