👩‍🍳 How to make Gajar Ka Halwa

  1. Heat ghee (30ml) in heavy-bottomed pan over medium heat (160°C).
  2. Add grated carrots; stir well for 2 min to coat with ghee.
  3. Add milk (500ml); bring to boil on high heat (190°C).
  4. Add cracked cardamom pods; reduce heat to medium (150°C).
  5. Simmer 30-35 min, stirring frequently, until carrots are tender and most milk is absorbed.
  6. Halwa should reduce to thick, jammy consistency.
  7. Add sugar (80g); stir well until dissolved.
  8. Soak saffron in 2 tbsp warm milk; add to halwa.
  9. Add almonds, pistachios, raisins; stir well.
  10. Cook on low heat (120°C) for 2-3 min more.
  11. Serve warm. Should be thick, creamy, carrots cooked tender.
