👩🍳 How to make Gajar Ka Halwa
- Heat ghee (30ml) in heavy-bottomed pan over medium heat (160°C).
- Add grated carrots; stir well for 2 min to coat with ghee.
- Add milk (500ml); bring to boil on high heat (190°C).
- Add cracked cardamom pods; reduce heat to medium (150°C).
- Simmer 30-35 min, stirring frequently, until carrots are tender and most milk is absorbed.
- Halwa should reduce to thick, jammy consistency.
- Add sugar (80g); stir well until dissolved.
- Soak saffron in 2 tbsp warm milk; add to halwa.
- Add almonds, pistachios, raisins; stir well.
- Cook on low heat (120°C) for 2-3 min more.
- Serve warm. Should be thick, creamy, carrots cooked tender.
