👩🍳 How to make Fafda Jalebi
- (Fafda):
- Mix besan, turmeric, chilli, ajwain, baking soda, salt in large bowl.
- Add 30ml oil gradually while mixing.
- Add warm water slowly; knead into soft, smooth dough. Rest 30 min covered.
- Divide into 8 portions. Roll each into 4-inch log on wooden board.
- Gently extend with palms into 8-inch length.
- Heat oil in wok to 175°C (test: small piece sizzles immediately).
- Using knife, scrape fafda into hot oil carefully.
- Deep fry 1-2 min per side on medium heat (170°C) until golden, crispy.
- Remove with slotted spoon; drain on paper.
- (Jalebi):
- In saucepan, dissolve 200g sugar in 200ml water over medium heat (160°C).
- Add cracked cardamom pods; boil 3 min.
- Add lemon juice; stir well.
- Syrup should reach one-string consistency (drop 1 tsp on cool plate; it forms thin thread).
- Keep syrup warm.
- While still warm, dip fafda in warm jalebi syrup.
- Serve immediately with hot sweetened yogurt or khichiyu.
- Fafda should be crispy, jalebi soft and syrup-soaked.
