👩‍🍳 How to make Doodhpak

  1. Heat ghee (20ml) in heavy-bottomed pan over medium heat (160°C).
  2. Add washed rice; fry 2 min until opaque.
  3. Add milk (1 liter); bring to boil on high heat (190°C).
  4. Add cracked cardamom pods; reduce heat to medium (150°C).
  5. Simmer 25-30 min, stirring occasionally.
  6. Rice should be cooked, milk thickened to creamy consistency.
  7. Add sugar (100g); stir well until dissolved.
  8. Soak saffron in 2 tbsp warm milk; add to doodhpak.
  9. Add nutmeg powder; stir well.
  10. Cook on low heat (120°C) for 3-4 min more.
  11. Serve warm, garnished with sliced almonds and pistachios.
  12. Should be creamy, rice tender, richly aromatic.
