👩🍳 How to make Dal Dhokli
- Mix wheat flour, besan, carom seeds, turmeric (½ tsp), salt (2g), oil (15ml), and water to form stiff dough. Rest 5 min. Knead smooth.
- In pressure cooker, add toor dal with 400ml water and 1 tsp oil. Cook 1 whistle (5 min).
- Heat ghee in large kadai over medium heat (160°C). Add mustard seeds, cumin seeds; crackle 30 sec.
- Add curry leaves, asafoetida, green chillies; fry 1 min.
- Add ginger-garlic paste; sauté 2 min until light golden.
- Add chopped tomato; cook 3 min until soft and mushy.
- Add remaining turmeric, red chilli, coriander, salt (3g).
- Pour boiled dal into kadai; bring to boil over medium-high heat (180°C).
- Cut dhokli dough into thin strips (5cm x 2cm) using knife; drop into boiling dal.
- Stir well; cover and simmer on low heat (120°C) for 15 min until dhokli pieces are tender and cooked.
- Drizzle ghee on top. Serve hot. Consistency should be thick, creamy dal with soft dumplings.
