👩🍳 How to make Cucumber Curry
- Peel cucumbers; remove watery center with seeds. Cut into 2cm cubes.
- Heat oil (15ml) in heavy kadai over medium heat (160°C).
- Add mustard seeds; crackle 30 sec.
- Add cumin seeds, asafoetida, green chillies; fry 1 min.
- Add ginger; fry 1 min.
- Add cubed cucumbers; stir well for 2 min.
- Add turmeric, red chilli, coriander, salt (4g), sugar; mix thoroughly.
- Cook on medium heat (150°C) for 8-10 min without covering.
- Cucumber should become tender but still hold shape.
- Add lemon juice; stir well.
- Serve hot. Should be delicate, pale green, tender.
