👩‍🍳 How to make Cucumber Curry

  1. Peel cucumbers; remove watery center with seeds. Cut into 2cm cubes.
  2. Heat oil (15ml) in heavy kadai over medium heat (160°C).
  3. Add mustard seeds; crackle 30 sec.
  4. Add cumin seeds, asafoetida, green chillies; fry 1 min.
  5. Add ginger; fry 1 min.
  6. Add cubed cucumbers; stir well for 2 min.
  7. Add turmeric, red chilli, coriander, salt (4g), sugar; mix thoroughly.
  8. Cook on medium heat (150°C) for 8-10 min without covering.
  9. Cucumber should become tender but still hold shape.
  10. Add lemon juice; stir well.
  11. Serve hot. Should be delicate, pale green, tender.
